I have these midi in and midi out on my digitalpiano. What do they do? How do they work?

I give this a few hours, if that, before it gets whisked away to Gear Talk. :P
As for the question, they're good for hooking it up to your computer and recording in MIDI format as opposed to WAV format. In MIDI you can change things like the tone, the speed, and you can modify it because it's recorded note by note, instead of being recorded as a single entity which is what happens with WAV and MP3 recording.

It's still not moved! :)
What Irish already said is probably one of the most important facts concerning what MIDI can do, but you can do other nice things with it, too!
I don't know how your MIDI files sound on your PC, but you can let your piano play the files and, in some cases, the files sound awesome!!!
Moreover, you can edit the sounds of your keyboard with the pc, "download" and "upload" them from and on your keyboard, but this does actually only count for synthesizers...

Ahhh... Thank you too.

You're welcome!
But be careful - you might be having the feeling that you need to buy a synth after you found out what MIDI can do in connection with one :P

I just spent 1000 dollars on this digital piano so getting a synth is out of the question.

Well, you surely have your reasons why you bought a piano and not a synth... Because pianos have some advantages in comparison to a synth...
What I want to say is that you probably know why you bought a piano, so it should have been the better decision in your case... ;)
And you can still do many kewl things with a MIDI piano!

I choose the piano because I wanted to play more classical music.
But you got me to regret my choice.

yeah, synths allow for a lot more authentic orchestral sounds like in classical music and a variety of piano sounds, for example an alesis qs 7 oe 8.1 with classical piano and classical instruments q cards would probably cost you maybe 800 dollars total if not way less, but digital pianos have their perks too, the sound and feel is more authentic usually than a keyboard. I have a digital piano that was like 2000 dollars 10 years ago and I still think its piano sound is better than like the majority of the pro level synths in that price range of today that I have heard, even though it is with less options to tweak the sound. also, you wont be distracted with screwing around with all the sounds you have and instead will focus on making music, piano music specifically. It was an ok choice, dont worry.
