Are 12345 the fingerings for exercises 7, 11, 15, 16 and 17? For example exercise 7 has 12345 for the first 2 bars which are in C major but what about the C# major after it? is it 12345 also?

What about ex. 11, 15, 16 and 17?

Yes, all of them are meant to be 12345.
