Can't apply left hand when playing solo based on blues scale with right hand (like here: )

how can I use left hand in such context?

Some organists play "stabs" with the left hand when soloing - stabs are quick chord shapes that outline the harmony, just simple two-note or three-chords that include the third and seventh of the chord, along with perhaps an additional harmony note. To play the stab, just attack and pull away from the chord as quickly and percussively as possible, so that it barely sounds - that way, you get some harmony support without covering up the right hand.

With organ sounds in particular, another approach is to use the left hand to vary the Leslie rate - many organists will change the rotation rate continually while soloing to help emphasize or articulate notes or phrases in the right hand.
