Well, he's written exercises and etudes that he's developed for specific purposes. All of his own written training material is in his Online Conservatory.

Well there is this book: Dream Theater Keyboard Experience featuring Jordan Rudess.
It covers all you need to know about his technique on stage and when he is only practicing. It's pretty good stuff.

That's more exercises to help with particular songs and sheet music for said songs. The real nuts and bolts of his practice routine are in Total Keyboard Wizardry. Neither is by any stretch a bad book, I just think the latter shows more of what Jordan uses/has used to develop his technique.

You can also have a look at Jordan's old Keyboard Wizardry videos he did back in the 90's (he still had long hair then hehe).
He runs through some pretty cool stuff and it's actually quite informative. If you can't find a copy I think someone uploaded it to youtube ages ago, but I'm not sure if it's still there.
